Chinese name: Fu Ding Lao Gong Mei 福鼎老贡眉
There is a Chinese saying that could be understood as ‘A White Tea remains just a tea in its first year, and it becomes medicine after three years and turns precious in seven years’. This shows the value of our 2009 aged Gong Mei which has been saved for over ten years. The taste becomes more rich and full-bodied with a high content of Tea Polyphenols, which positively affects the flavour and mouthfeel. Don’t be confused by the stalks, as they are the key to its sweetness. They also bring more health benefits in lowering blood pressure and improving antioxidative effects, just like the wisdom that has been accumulating for over a decade.
This tea belongs to our Yìn 印 | TRACE collection.
Warm Brew
3g | 100ml | 95 °C | 15s
We recommend a steeping temperature of 95 °C (205 °F), where you can set the boiling water aside and allow it to cool down for less than a minute. Then take 3 grams of tea with 100ml water to steep for 15 seconds, or increase to 20 seconds if you prefer a stronger taste. The tea can be re-steeped several times when using a tea egg, filter bag, or Chinese Gaiwan/Yixing teapot.
You can always adjust the quantity and brewing time based on your preference. When using a larger container like a tea pot, you can take a small quantity and leave it in for a few minutes. It can also be boiled with other natural ingredients such as flowers and fruit.
This tea was the one that I have tried from the exploration box of 5 teas and so far it is one of my favourite. Not only does it have very subtle but complex notes, but the best part is how does it make you feel. After having it you feel much calmer and uplifted. Feels like it takes away all the stress of a day away, leaving you feeling calm and grateful. I recommend starting with around 2 grams brewed in gaiwan. I don’t recommend brewing it intense as it can lower a blood pressure, but brewed in the right way this tea is a miracle.
